Gin Kao Mai? This is the traditional greeting in Thai still used in rural places. It means "did you eat?" But more exactly it means did you eat rice? The understanding is that while at home greeting any visitor that you will offer food and make and sit down with any guest who wishes to eat. And those meals are centered around rice. People are the same everywhere you go, as the hustle and bustle of a more snarky and cynical city life takes root this sentiment is lost among many in urban settings but by contrast its sentiment only gets crystalized among those with warm hearts in the true reservoirs of culture. "Gap Kao" means "with rice." The perspective is that many things are seen as what you eat along side rice. You will find two following sections that fit into the "Gap Kao" section here, curries and sauté or stir fry. They are served with a side of Rice Berry. Rice Berry's flavor is exceptional and it compliments these dishes very well without becoming overbearing. Our rice berry is healthy without tasting like it's healthy and you don't have to convince yourself you like it while attempting to do something healthy for yourself. We've made the menu available to those who want full flavor while being mindful of healthy dietary commitments. We try to take the pain out of healthy dietary choices. We match flavor profiles of the rice and balance sweetness and sour and bitter and savory all to make this enjoyable. For vegan or vegetarian diners we selectively incorporate the appropriate protein sources and flavors and textures to offer complete essential amino acids with each meal. We stick more to Whole Foods and offer less processed or manipulated items like tofu and we think it can broaden and enhance your dining experience to see these whole food items in a new light. Examples include black chickpeas, green French lentils, and a wide variety of heirloom beans. Rice and beans when eaten in combination can offer a vegan source of all the essential amino acids otherwise only gotten from eating meat. We offer very enjoyable protein choices for meat eaters and/or seafood eaters but also, with vegans in mind, our "Gap Kao" section in this context might be best described as Gap Kao Gap Tua," "with rice and beans." We make these dishes with attention to nutrition while adhering to strict principles of balancing flavors within Thai cuisine. I absolutely know that meat eaters will find not the exact same but an equally satiating experience if they choose to try a vegan option and we encourage you to do so and welcome all the feedback you might offer. Yes, red meat has the most biologically available and digestible protein source but there are plant base options that are not really that far behind in their availability and digestibility. Ultimately we believe a divers diet is maximal to health and a diverse diet is maximal to palette pleasure. You gotta feed both.

All curries come with a mix of vegetables that are prepared accordingly such as caramelized onion, Shanghai choy or roasted red pepper and may vary from day to day due to availability.
