Thai food is absolutely unique and identifiable and yet also amazingly flexible. Allow our chefs, with their deep-rooted knowledge and passion for Thai culinary arts, to transport you to the heart of Thailand, one exquisite bite at a time and do so in a way that may be more accessible to a western palate while not compromising on taste. We present this cuisine in a way that allows one to be adventurous and also entirely enjoyable while being mindful of healthy life choices. We like to point out the differences between tradition, contemporary tradition and modern tradition. Thai food can wonderfully present all of these in a seamless fashion.
We also strive to make these items accessible to as wide an array of diners as possible offering vegan, pescatarian, non vegan yet poultry, meat free and gluten free options and more. Unfortunately, outside of this, because of the nature of the traditional ingredients, we have limited capacity to make most items addressing food allergy concerns. We use peanuts and other items processed in facilities where peanuts were also processed. We use ingredients that necessarily have shrimp or seafood as a critical component. It can be as complex as recognizing that buying particular premium lentils means that they were also harvested using machinery that was used to harvest wheat and that fibers and residue will carry over to the lentils and no matter the amount of screening and rinsing and despite a dish not having any whole food item derived from gluten it still might not be suitable for high gluten sensitivity. We necessarily use items with shrimp or other seafood as a component or ingredient. We strive to make our product as accessible to as wide an array of diners as possible but simply may not be able to cater to particular specific dietary or allergy needs.
Cast of Characters
There’s a whole cast of new characters that you’ve never met even if you may have frequented some Thai establishments. Thailand is a diverse and rich country with much regional variation and more often than not the food from each particular place and peoples, while absolutely delicious, can be completely different. We like to highlight some of the lesser known flavors and showcase some of the local favorite twists we’ve found and sometimes put our own twist on things as we make this food accessible to you here in the US. It all starts with quality ingredients and the appropriate ratios and prep. Just do everything right and the food practically cooks itself. …… but seriously, when you adventure outside your known zones it can reward you with something you never knew you always liked. Pronounced faaaat loy with aaaa sounding like the “o” in pot but you extend the sound out a little and linger on it before you hit the “t.” And the Loy is more like “loey” press here to hear it. Translated literally it means to hit or to strike. For the way it’s commonly used think instead of the way someone might ‘hit’ the books or ‘hit’ the road or ‘strike’ a path. fatloy can mean to just go do it already or to succeed or to pull something off really well or to put an outfit together well.
